Cooking Suggestions
For basic boiled snails: Thaw in refrigerator, thoroughly rinse shells. Place into boiling water, cook for appropriate time until meat is fully done. Serve with garlic-chili dipping sauce to highlight natural sweetness. For spicy marinated snails: Boil snails first, then soak in seasoned sauce mixed with chili, garlic, scallion and vinegar for several hours for deeper flavor. When stir-frying or braising, cook with ginger, garlic, chili and aromatic spices; avoid over-cooking which will make snail meat rubbery and tough.
